A joyous Mardis Gras celebration was had by all at Balconies Distilling here in Waco, Texas. A special shout out to Casey Hooper, Creative and Merchandising Director and Carole Fergusson, Assistant Store Manager. Ladies we had a blast!  I love it when a good party comes together well.

Each Mother Sauce produces two to three secondary sauces and host of derivitive sauces.

The key to developing rich sauces is in mastering the art of making a Roux.

Over-hydrated or thin sauces can be saved by making "slurry"; part cool sauce or liquid plus starch for thickening.
